Morning Glory Muffins

Ingredients:

1 cup almond flour

1 cup rice flour

2 and 1/2 teaspoons baking soda

1 teaspoon ground cinnamon

1/2 teaspoon sea salt

2 cups grated carrot

1 cup peeled and grated apple

1/2 cup raisins

1/2 cup chopped walnuts

4 eggs

1/2 cup unsweetened applesauce

2 tablespoons honey

1 teaspoon vanilla extract

Procedure:

1. Preheat the oven to 400 degrees.

2. Coat a muffin pan with coconut oil.

3. Combine all the dry ingredients in a large bowl, thoroughly.

4. Add the carrots, apple, raisins, nuts, and coconut and mix well.

5. Whisk together all the wet ingredients in a medium bowl.

6. Add the wet ingredients to the dry and mix just until evenly blended, using as few strokes as possible.

7. Fill the muffin cups till almost full as the muffins do not rise much. Bake for 15 to 20 minutes or until the tops become brown. Remove from the pan and place on cooling rack. Cool slightly and serve.

Note on flour options: I have also used the combination: 1 cup oat flour and 1 cup almond flour. It comes out fabulous but it does take about 15 minutes longer to bake.

*The original recipe was taken from the book, 3 Bowls Vegetarian Recipes from an American Zen Buddhist Monastery however, I changed some things including the flour to make it gluten free.
